Spinach Salad with Oats

INGREDIENTS

    • 1 cup Hanaa Whole Grain Oats

    • 150 g baby spinach, finely chopped

    • 1½ cups cooked corn, drained

    • ½ cup scallions, chopped

    • 1 red pepper, seeded, and diced

    • 6 tbsp olive oil

    • 2 tbsp white vinegar

    • 1 tsp salt

    • ¼ tsp pepper

PREPARATION

  1. Combine Hanaa Whole Grain Oats with 3 cups of water in a medium saucepan and bring to a boil. Reduce heat and simmer for 30 minutes. Drain the oats and rinse under cold running water using a fine mesh strainer.

  2. Transfer to a large bowl and add the spinach, corn, scallions, and red pepper.

  3. Whisk together the olive oil, vinegar, salt, and pepper and pour over the salad. Stir all the ingredients together thoroughly.
