· 400 g Hanaa Sweet Corn, drained
· 1 cup lettuce, shredded
· 2 avocados, peeled and diced
· 250 g grape tomatoes, halved
· 1/8 red onion, thinly sliced
Dressing:
· 2 tbsp fresh lime juice
· 2 tbsp olive oil
· 1 ½ tbsp fresh coriander, chopped
· ½ tsp salt
· 1/3 tsp red chili flakes
· Pinch of cumin
· 1 garlic clove, minced
1. Combine all of the salad ingredients together.
2. In a small jug, mix together the dressing ingredients to combine well, and pour over the avocado salad. Season with extra salt, if desired.
