Vegetable Tomato Soup

INGREDIENTS

  • •       1 onion, finely chopped

    •       1 carrot, small cubes

    •       1 potato, small cubes

    •       2 garlic cloves, minced

    •       1 Hanaa chopped tomatoes

    •       1 tbs vegetable powder (or mixed Italian spice)

    •       1 lemon juice

    •       1 tbs olive oil

    •       1 sprig rosemary.

    •       salt & black pepper

    •       4 cups water

     

PREPARATION

  1. In a large pot add the olive oil & onion and sweat the onion until translucent with a pinch of salt & pepper.
  2. Add the garlic and stir for 30 seconds
  3. Add the carrot & potato and stir to cover with the oil then add the vegetable powder and stir for couple of mins.
  4. Add  Hanaa chopped tomatoes, water, rosemary, lemon juice, and season with salt & pepper.
  5. stir well then let it cook over medium-low heat for about 44 mins or until the vegetables are well cooked.
  6. Serve with lemon wedges.
